A Christmas meal isn’t complete without a “sweet” element — but who says the sweet stuff is just for dessert? This year, add some sweetness to your dinner table and have a not-so-traditional side dish: cranberry-glazed carrots. It’s as simple as taking cranberries and carrots and combining them together for one delicious dish.
Including orange juice and zest is also a way to kick up the flavor – in a way even the kids will enjoy! To ensure this dish is not-too-sweet, add fresh mint to help bring balance.
So there you have it: cranberries, carrots and mint – oh my! Let this recipe knock your Christmas day socks off. This will mesmerize even people who aren’t too fond of carrots. You can store leftovers in the refrigerator to bring for lunch or microwave as a side item a different night of the week.
SWEET CRANBERRY GLAZED CARROTS
1 1/2 pounds carrots, julienned
1 Tbsp extra-virgin olive oil
1 tsp. honey
3 Tbsp. freshly squeezed orange juice
1/2 tsp. fresh orange zest
1/3 cup dried cranberries
1/4 cup finely chopped fresh mint
1/4 tsp. sea salt
1/4 tsp. freshly ground pepper
In a large bowl, combine all ingredients; gently toss to combine.
Refrigerate until ready to serve.
